  • • Tamarind paste (చింతపండు) - 1 tablespoon
  • • Salt (ఉప్పు) - 1/4 teaspoon
  • • Neem flowers/buds (వేప పువ్వులు) - 1 teaspoon
  • • Black Pepper (మిరియాలు) - 1/4 teaspoon
  • • Raw mango (మామిడికాయ) - 2 tablespoons, grated

Additional Ingredients:

  • • Water - 2-3 tablespoons
  • • Fresh coconut (కొబ్బరి) - 1 tablespoon, grated (optional)
  • • Banana (అరటికాయ) - few pieces (optional)
  • • Fresh coriander (కొత్తిమీర) - for garnish

In a mixing bowl, dissolve the jaggery in 2-3 tablespoons of water. Mix well until the jaggery completely dissolves and forms a smooth liquid base.

Add tamarind paste to the jaggery water. Mix thoroughly to combine the sweet and sour flavors. Adjust the quantity based on your preference for tanginess.

Season with Salt

Add salt to the mixture and stir well. The salt should be balanced - not overpowering but noticeable as one of the six tastes.

Carefully add neem flowers or young neem leaves. If fresh neem is not available, you can use a tiny pinch of turmeric powder as substitute, though neem is traditional and preferred.
